I am ashamedly addicted to coffee. My one vice left in life. (well besides candy). From time to time I like to add a little extra something to my coffee. I bought some vanilla beans last year while shopping at a bulk herb store in San Francisco. I probably should have used it long ago since it seems to have dried up a bit but the flavor is still all there. This recipe is super easy as the title implies. You can add this to your iced coffee like I did this afternoon or make a fancy cocktail with it.
1 cup of water
1 cup of sugar (I used demerara sugar but any will do)
1 vanilla bean
vanilla bean paste (optional)
Heat the water, sugar and vanilla bean paste until it boils. Turn down the heat to medium and let simmer there for about 4 minutes to let some of the water evaporate off and get a little more syrupy. Take it off the stove and pour into a glass jar with the beans. Scrape as much of the itty bitty vanilla beans off before you dump it in the jar. Let this mixture cool and refrigerate for up to about a week.
