Orzo Salad Recipe

I have meaning to do this post for a few months. I found this Balsamic Caprese Pasta Salad recipe over at Kitchy Kitchen one of my favorite food blogs. I love taking pictures of food, ask my boyfriend, I literally photograph all my food, yes I am one of those people. I need to get a new lens for my camera so I can take good macro shots. I have lots to learn about photography but I love cooking, so I am attempting to do more recipies (besides the drink recipies I have done in the past. I love making drinks, even though I do not drink, I am a mega super bartender! Hopefully I will be posting a chocolate ice cream stout ice cream float recipe I found online soon!

Orzo Balsamic Pasta Salad


1 c orzo pasta
1 pint cherry tomatoes halved
1/2 c basil chiffonade
1/2 c pine nuts
1 Tbsp balsamic vinegar
3 Tbsp olive oil

I eat vegan 90-95% of the time. I try to never limit myself or put myself in any box. I am usually a very black or white kind of person and I beat myself up if I don't do things perfectly. Surprising for a "laid back go with the flow" aquarius. People are surprised when they hear that I am kind of compulsive and a perfectionist.   So anyway, I am trying to be a little more relaxed, especially with my diet. If I want to eat a slice of pizza every so often I am not going to feel bad. Anyway...I made a few adjustments to the salad since I don't really like to eat cheese that much (except goat cheese mmmmmm!!!) so I omitted the mozzarella cheese in the original recipe and cut down on the pine nuts to 1/4 c.

I like to grow all my herbs so I have them on hand when I want to cook something that require herbs, plus its a lot fresher than buying them at the store!

 I used to have a few tomato plants but the unusually blazing hot summers here in san diego and the especially sunny location I had  my plants in caused them both to dry out and die. So since my boyfriend works at whole foods he brought me these delicious cherry tomatoes. They might have been heirloom? Is that possible? Heirloom baby tomatos? They were purple ish color.
