I used to live off frozen pizza. My favorite was Amy's pesto pizza. Trader joes has the same one for a little less, but why buy a frozen pizza when you can make it yourself? I used basil from my garden and instead of stripping the plant to its bare bones, I used about 1.5 c of basil and 3 leaves of lacinato kale. You can't taste the kale at all and it adds some extra hidden vitamins!
To make the pizza divide the dough into 4 equal pieces. Preheat your oven to 425 f. Roll out the dough to your desired thickness. Spread 1 heaping spoonful of pesto as your sauce base. Sprinkle on 1/4 the total shredded cheese. Top with sliced tomatos and small bite size pieces of broccoli. Slice up some Kalamata olives and finish it off with about 4-5 olives. The original Amy's pizza doesn't have olives but this adds a delicious saltiness that it's missing. But you can leave them off if you wish. Bake for 12 min or until the crust is slightly browned and you are ready!
You can save the rest of the dough in the fridge and it can be used the next day. If you want to make and freeze the pizzas just add toppings to the remaining dough and place it on cardboard circles. You can get these cardboard circles at any bake supply shop or anywhere that has cake making supplies. Place the pizza in a ziplock and freeze. Just thaw when you are ready and bake at 425!
