My birthday is next week and I have been searching for days now for the perfect raw cake to make. Yes I am going to make my own cake. I am a bit of a control freak, but also no one in my family is very familiar with raw "baking" so I figured I should make it myself. The recipe calls for coconut milk, but I didn't want to buy the stuff in a can. I am sure the milk in the carton is full of preservatives and chemicals also. So I decided to make my own!
4 cups of water
2 cups unsweetened dried shredded coconut
nut milk bag or fine mesh sieve
This recipe is so simple it almost doesn't need any instructions. All you need to do is soak the coconut in the water for 2-3 hours. Pour the water and the soaked coconut into a blender and blend it up for about 3 minutes, depending on how good of a blender you have. If you have a nut milk bag, great! If not, you can use a very fine mesh sieve. Simply pour out the pulp and water into the bag and squeeze until no more liquid comes out.
A little extra treat came out of this whole process. While I was blending I noticed an accumulation that started to gather on the sides of the blender. When I poured out the pulp it remained stuck to the blender. I also got some on my hand and noticed it was super oily. Its coconut oil! I scraped off the remaining oil into a little cup to just rub on my skin. But while it is unrefined in any way, I am sure you can use it in the same way you might use commercial coconut oil. It will only be a very small amount though so I recommend just using it on your dry elbows, hands or cuticles! I hear the dried pulp can be dried and used as coconut flour as well! No waste here!
